Lux Inspired Lemon Tea Cake {a.k.a. Lemon Loaf}


Our Lemon tree is finally producing lots and lots of lemons!  My daughters and I picked a bunch of lemons this afternoon and I wasn't sure what I wanted to do with them all, so after finding a few recipes I decided to use the first 7 on this Lemon Tea Cake.  My daughter always wants a slice from our local coffee shop so we made it together!


Here are the ingredients for the main Cake:
1 and 3/4 cups  organic all-purpose flour 
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup organic Greek yogurt 
The juice from 1 and a half lemons
The zest from 1 lemon
1 cup organic granulated sugar
1 cup (2 sticks) organic unsalted butter, at room temperature 
5 large organic eggs, at room temperature, beaten

Lemon Syrup
1/8 -1/4 cup granulated sugar {I use closer to 1/8 sugar to cut down but original recipe was 1/4}
The juice from 4 and a half lemons

Glaze

3/4 cup organic confectioners’ sugar
The juice from 1 lemon


Preheat the oven to 325* f and then mix the cake ingredients together and beat together.  Combine well.  Melt some coconut oil {or butter} in the 9x5 inch bread pan before baking to prevent sticking.  Bake at 325* f for 56 minutes or a few minutes longer if necessary. 



While cake is baking combine ingredients for Lemon Syrup in sauce pan.  Heat on low mix together until sugar dissolves into lemon juice, set aside until cake is done.

Now the syrup is made; allow to cool, make Glaze.  Beat together confectioners sugar and lemon juice ingredients.  set aside.


Once the cake is done immediately pour the Lemon Syrup onto of the cake to soak in.  Then put in fridge so it can cool completely {about an hour or two}

Make sure cake is cool to the touch, then pour over the Glaze.

And it's done! Enjoy.
