Caramelized Tofu with Pecans & side of Green Beans


Caramelized Tofu with Pecans and side of Green Beans:
Use one package of extra-firm tofu cut into thin 1-inch slices
Olive Oil
3 cloves garlic, minced
Several handfuls of pecans, whole and/or chopped
3-5 tablespoons organic brown sugar
2-3 servings green beans
Cook the tofu strips in large hot skillet with salt and a splash of olive oil. Saute until golden brown. Add the garlic and pecans, and cook for a short time. Stir in brown sugar. Cook for another couple of minutes. Scrape the tofu out onto a plate and set aside while you cook the Green Beans.
In the same pan, just add a touch more oil, another pinch of salt, and dial the heat up to medium-high. Stir in the green beans with an ounce of water. Cook for 2 - 3 minutes, stirring a couple times, add some more brown sugar and pecans, let cook for a few more minutes. Plate next to Tofu and serve quickly.
Serves 2 - 3 as a main, 4 as a side
