Taco Tuesday in Fiesta Soup form

This soup is like a party in your mouth, with southwestern ingredients and Mexican influence I've named it Fiesta Soup.
Ingredients:
Uncooked beans
Vegetable stock
Bag frozen corn {organic if you can}
Jar of salsa or several tomatoes
1 Onion sliced and diced
Spices; cumin, coriander, cilantro, chili powder, cayenne
Salt + Pepper
Avocado
Cheddar cheese {dairy is super important rBST free and organic}
Greek yogurt or sour cream to top if desired.

Pour uncooked beans, vegetable stock, salsa, onion, spices, salt + pepper into crock pot in the morning or early afternoon and set to low heat.  About an hour before, you can turn to high heat if you need to speed things up.  Spoon out into individual bowls when the beans are fully cooked, top with sliced avocado, cheddar cheese and sour cream (or greek yogurt) if desired. devour with chips (or corn bread!)
